Authentic Scottish Shortbread Recipe: Homemade Breakfast In 9 Steps 2022

Halloween is over, November is here, and everyone is officially on the Christmas countdown. Right?

Actually, I love Thanksgiving and we hold off Christmas decor and music until Black Friday. But, I do plan ahead with Christmas shopping, baking, and menu prep. One of my favorite things to do during the holiday season is bake.

This recipe for Scottish Shortbread has been in our family for generations. It is buttery, just sweet enough, and will melt in your mouth. It’s quite simple to make but does take a bit more time than your average cookie. But it’s entirely worth it.

And did I mention it only has 3 ingredients? Yup. If you have flour, butter, and sugar, you can have this delicious treat whenever you wish.

Funny story. My college roommate and I used to bicker over who’s shortbread was better- my mom’s or her grandma’s? Turns out,  they were using the same recipe. So we were both right. And related, so we should have figured it out sooner.

I make this every year at Christmas, to give away, to serve with coffee, to eat as breakfast. Don’t judge me.

Authentic Scottish Shortbread

A buttery cookie, simple and delicious. Prep Time 10 minutes Cook Time 2 hours Total Time 2 hours 10 minutes


  • 1 cup butter, softened
  • 1/2 cup sugar
  • 2 1/4 cups flour


  1. In a mixer, beat butter and sugar until light and fluffy.
  2. Add flour and mix until combined. The batter will appear crumbly.
  3. Pour into an ungreased, square baking pan and press evenly with hands.
  4. Poke the top with a fork, all over.
  5. Bake at 250 degrees for one hour.
  6. After removing the pan from the oven, slice into inch-wide bars with a sharp knife.
  7. Sprinkle top with sugar.
  8. Turn off oven and replace pan inside, allowing to rest in off oven for 1 hour.
  9. Cool completely and serve.
